On the maps that you cutomize at Disney's site, you pick and choose which rides you want to include. So, if you want to include all the rides you could, if you don't want them all you don't have to select them all. If you want them all, there is a box you can click to have everything selected, or you go through and click on what you want.
The maps are pretty cool and definitely worth ordering. I would even say they would be worthy of being framed ;-)
I'm trying to find a site that breaks the attractions down better, but I can't seem to find/think of one at the moment. I will keep looking and post the link if I find one. I've included a link to All Ears that has a lot of info on each park, ride, etc. That should help a lot with the planning. There are some sites that break down attractions by land, in the park, not sure if that would be much use to you though. Also, at Disney's site, where you customize the map, you can select the box right next to the park name, Magic Kingdom for example, and in the box is lists dining, entertainment, attraction, special event, and tour. If you select one of those, it then brings up the attractions, entertainment, etc. I think that is going to be the closest to what you can find. But again, I will keep looking around and see what I can find.
I would definitely order the map, they are fun to look at. I don't know if they are much better than the maps in the park, but they make for a nice souvenir, scarpbook item, etc. and they are really fun for preparing for your trip and getting excited as well.
Hope this helps!

Besides the parks, Downtown Disney, with circ du soliel, Pleasure Island, and Disney Quest. .....
2 water parks, visit the Animal Kingdom Lodge, visit the Boardwalk hotel at night...miniature golf, horseback riding at the campground, rent boats,.....Your maps should be enough, and it is easy to find the time for the parades.
