My friend is going there for part of the summer on some business-type perk thing and being as she's a wonderful friend, who is currently single, she invited me to go with, so OF COURSE, I'm going....I mean seriously, how crazy would I be to pass this up? :-D
Just think....pyramids.... desert.... camels.... the sun.... busy streets....
I'm excited! 31 days left!!!!
So any recommendations on what to do or not do while I'm there?

I'm an American Egyptian (Now in Egypt) so let me give u some tips & u can ask more if u need to.
Depending on how long u plan to stay. you have to plan everything from day one to avoid losing days in the hotel doing nothing.
Here are the major things to do:
In one day you can visit the pyramids in the morning & a nile cruise at night.
Egyptian museum (if you like history u have to stay at least one day there, it's huge)
There's a one day tour for Islamic cairo to show u the old mosques & old cairo also a tour for Coptic cairo to visit the ancient churches.
Now if you have enough time, I suggest you take the evening train to Luxor & you'll wake up there & you can spend a coupld of days to see all the temples & tombs (worth the trip) & at night go to sound & light show.
You also want to visit the modern side of Egypt, there's a very nice shopping mall called "City Stars" pretty nice.
To shop for the egyptian artifacts & stuff, you have to go to the old bazzare but here's the advice, if you wanna go there try to have someone Egyptian with you or the sellers will rip you off :D

I am excited for you! I would love to visit Egypt, and I feel that you are going to have an absolutely fabulous time! As for what to do, you'll have a plethora of choices...you already mentioned a few!
