Excreta (especially urine) contains high amounts urea and uric acid, both sources of ammonia. Thus the urine and excreta gives out ammoniacal odor.

I was watching an episode of Mythbusters where they were trying to come up with different cleaning solutions that Pirates might have used on their ships back in the day. Well, they tried rum, ye ole soap, tide (as a control substance) and urine boiled down to ammonia. Guess what was the best at cleaning up old blood--the old urine! I dunno if I would try this at home! ;-)

I didn't know about urea turning to ammonia, but it makes sense. I just wanted to add that it's not just babies whose urine smells like ammonia. Any accumulation of urine tends to smell that way. I knew someone who had pet rats who was irresponsible about cleaning and replacing the bedding/litter in their cage. The cage smelled very strongly of ammonia, due to the build-up of rat urine. :(

When urine sits at room temperature, some of the chemicals in the urine may break down and cause an ammonia-like odor.

That is a sympton on 1. not drinking enough fluids and or could have a bladder/kindey infecton.
a doctor will be able to run a simple test.
