I am sure she would love to use other senses. Go to a community concert (band, chorus or orchestra). A nice bakery for some goddies and coffee. Or just ask her what she likes to do for fun and relaxation.

If you are going to the country, find a place where there are harbingers of spring like plants and flowers budding. She might really enjoy the odors; you can also explore the texture and form of plants, and this can be rewarding as well. You should know a bit about the subject though. Most of all, choose activities that engage the other senses. The botanic gardens in Brooklyn, NY, for example, has a garden for the blind with lots of plants that yield interesting odors when touched.

Singing is always fun. Why not take her for a walk or a swim if she likes doing that. You could also read her a book.
