I'd have to say "Tears in Heaven" by my god, Eric Clapton. It's a good song, sounds great and it shows a range of skills for a guitar player. "Stairway to Heaven" is a classic guitar song to know, I never thought I'd ever site Wayne's World as a source, but just about everyone does know how to play it. : )

I'm going to have to say that this is a very open question, on the fact that there are WAY TOO MANY songs that every guitarist should know.
Besides, few people actually learn the whole "songs you have to know", they just learn the main riff, or the intro. Therefore, the song you should learn is something you can play all the way through.
Personally, I try to learn everything I can. Not only do you learn a lot from it, you can jam with people for hours. Tons of fun.
Oh, and it can't be Stairway... Because there are too many incompetent people who will destroy that song... BAD STUFF.

Most guitarists don't play songs, they repeat riffs incessantly. The old favorites are Secret Agent Man and The House of the Rising Sun. Nowadays young folks are busy trying to figure out the bass line to Kiss'es God of Thunder, Ozzy's Crazy Train, the Travis pick to Dust in the Wind by Kansas, Blackmore's riff to Smoke on the Water, Clapton's original riff leading into Layla, Stevie Ray Vaughan's lead in to Pride and Joy, and of course Freebird. A few brave souls are playing around with Los Lonely Boy's riffs, especially the lead in to How Far is Heaven, and every once in awhile you will spot a goth in the far corner surreptitiously trying to work out Manson's cover of the Eurythmics tune - Sweet Dreams are made of these. the lead in to Stairway to Heaven might be too obvious to mention, but just in case, well I mentioned it.
The song that every guitarist should know how to play however, is "Nothing Else Matters" by Mettalica. It's a great little finger picking tune and it has decent lyrics. Most people can stand to listen to it and it might even get you a gig in a little supper club if you can carry half of a tune. Classical Gas by Mason Williams is a standard gem. Fur Elise will get you noticed pretty much anywhere, and even Jack Black couldn't disparage Bach's Bourre. The nice thing about the classical stuff is that you don't have to worry about the union rep breathing down your back, wanting to bust you for copyright violations. And everybody knows that the classics can rock if you play them fast enough, hard enough and loud enough.

Although i'm a bassist, these are songs that aren't terribly difficut to study. I will recommend finding out primary, minor scales and Blues development. This can help build your arsenal as a musician.

well theres the obvious ones listed already like smoke on the water and stairway. i would consider someone a good guitarist if they can play eruption or for the love of god by steve vai. a couple easy crowd pleasers are carry on my wayward son, layla, rock you like a hurricane, all along the watchtower. those are good things to know
