"I don't know".....does 'know' function as a verb? or does do?

The verb--as far as my schooling says, which has been pretty lame--is do. 'I do not know'--what you are doing happens to be not knowing. The verb phrase is 'do know.'

Both function as a verb, but do is a helping verb. It's just a little word to make your sentence clear.
Know is the main verb of the sentence...

I'm pretty shaky on grammar, but it's something along those lines!

Do know is the complete verb. Not is never a verb - it's an adverb because it modifies the verb.

do is helping verb

Yes it does. "Don't" is just a negation of the verb, so "don't" is an adverb I think. "Know" is the verb.
