NOTE: I mean military sci-fi as in combat between ships, not futuristic marines.

I have some favorites, but I wouldn't want to influence any of you...

Stephen Donaldson in his "Into the Gap" series is certainly worth a look, as is Joe Haldemann in "The Forever War" (which hardly qualifies as ship-to-ship combat, but at least it explains why not).

Exploring the gaming community may also be worth a shot (in the Dark, perhaps): the more obscure gamers often have great passion for researching the realism of such an issue. (There was, for example, a good sub-light relativity ship-to-ship combat-***-strategy game produced by SPI years ago - but with all the puta games going around these days, there must surely be some outstanding ones, both in the realist and the atmospheric dimensions of play).

Patrick O'brian has a great series about naval warfare between Britain and Napoleon's France. It's not what you'd call sci-fi, it's historical fiction but the battles are based on real naval actions. The first book in the series is Master and Commander. Highly recommended.
