Many are the times when i would take my time eating the taco slowly until it kept getting all over the place several times over i swear i'd have taco sauce all over my face and neck by the time i was done the taco was exhausted so i let it rest.
I would often spend 30 minutes or more on a nice warm juicy taco.

Depends on what kind of sausage we are talking about--italian, chorizo, boudain--all good choices. But if its just your run of the mill smoked sausage I would hesitate
