Generally, what holds atoms in place in the Universe? Why does it not simply fall apart? Is it just an atomic level lattice?

What about matter that's not very dense, why does it not simply "blow away"?

The fundamental physical forces called "strong", "electromagnetic", and "weak" are at play.
The fourth force, gravity , is much weaker, and is more important in macroscopic systems.

Atoms are held in place by numerous forces. Anything that has mass will stay in place unless a greater force is applied, one of Newtons Three Laws of Motion. If enough energy is absorbed all matter can be converted to energy based on
E = mc^2.

generally speaking atoms are held together by the electromagnetic charge within them. materials are held together by bonds (such as ionic, covalent, and hydrogen bonds).

gravity hold everything on this earth (i would guess that you've never been to Kansas because matter that's not vary dense does simply "blow away")
