is him refusing to grow up considered a phobia?

and if i were to teach a class about this phobia through the example of peter pan what's a good way to go about it?

Steven Spielberg's HOOK actually deals with this issue directly. That's a good place for you to start.

P.J. Hogan's 2003 film of PETER PAN is also a great reference. It stays pretty close to J.M. Barrie's novel, complete with all of its Freudian subtext. Aging and crossing the threshhold from childhood to adulthood is the crux of the conflict here, both for Peter and for Wendy. This is probably one of the most underappreciated of that year.

And for a background primer, why not use FINDING NEVERLAND, the film about J.M. Barrie himself and the somewhat fictionalized events that led him to writing Peter Pan in the first place?

The Disney version, while a classic and a fun film, barely touches on the subject of aging and is just a straightforward adventure. You can probably skip this one in terms of teaching materials

Hope this helps, and as a final tip, it's worth noting that in many productions of Peter Pan on stage and screen, the roles of Wendy's father, Mr. Darling, and Peter's nemesis, Captain Hook, are often portrayed by the same actor.
