The purpose of glue is to stick two things together. So glue wont stick to the bottle because you arent glueing it to something else...lol...the real reason it doesnt stick to the bottle is because air activates the glue and since when the bottle is closed no air gets to it it wont stick to the inside of the bottle.

Actually it does. If you have an old bottle of glue and cut it open - you'll notice that it does slowly dry out and stick to the bottle on the inside. But the cap keeps the moisture in so that it doesn't evaporate into the air as it does when the cap is open.

Maybe the inside of the bottle is treated with some anti-stick substance that keeps the glue from binding ?

bottles are generally made of polyethylene or polypropylene. both plastics are EXTREMELY difficult to stick to with adhesives, mainly due to the lack of pendant polar groups in the resin.
these plastics generally need to be plasma cleaned or treated with extremely unusual primer systems to get an adhesive to bond to them. there is also something called flame treatment, and it is exactly that- hit the plastic with an open flame to create bonding sites in the plastic.
uncured glue in the bottle generally does not stick for the same general reasons. there is also the description of "low and high surface energy" surfaces. it is a way to describe how a liquid does not wet similar surfaces. why does a sharpie not write well on a piece of tupperware? for the reasons described above

Because the inside has a plastic lining that it won't stick to, but it will stick to the outside of the bottle!

because liquid glue doesn't work that well and doesn't stick to plastic when there's not enough air to dry it
