I would expect it to reduce as the moisture in it evaporates off.

The moisture dries out and it goes stale: so it will lose mass.
However it gains mould, this means that if enough mould grows, it could gain mass ...?

It loses mass because water dries up but matter remains constant subject to rats eating it or crumbles falling off!!
