If the griddle is made of cast metal, usually iron or steel, then if it is used daily the heat will kill any germs on the surface. While it is hot, after you have finished using it, douse it with some water and scrape it with a flat, metal spatula. Scrape down into reserviour if there is one and clean that out daily. You may apply a thin layer of oil if it is prone to rust, which with lots of use, will be eliminated by a "seasoning" layer which you never want to scour off. If your griddle is portable, take it to the sink after it has cooled enough to handle and clean it with water only. Soap or other chemicals can be absorbed into the metal and flavor food cooked on it, so don't use them on a good griddle, they are not necessary. Treat the griddle as you would a nice cast iron skillet. No soap, and clean with hot water only and film it with olive oil after it has dried. Do not use canola oil, contrary to popular belief, it is not good for human consumption.
