I have two RCA cables hooked to the out on my cassett player, then to a Y adaper mini stero plug to the line in on my sound card. The cassett player indicates that I am playing sterio, however the input indicator on my Audacity program shows only the left recording level.

First go to "Start", "All Programs", "Accessories", "Entertainment", "Volume Control" and check that both channels are balanced. If they are, get yourself a cable that has the correct plugs for your Tape Player and the "Mic" socket on your PC. It sounds as if your Y adaptor is faulty or your cable is damaged. Also download yourself a copy of Levelator software (also free.)
Set Audacity to copy as "Wav" format and then run the Audio Copy through Levelator to "Clean Up" the copy.
To create an MP3, you will have to download the MP3 Codec into Audacity (very simple to download and install). Load your now clean copy into Audacity and select to convert to MP3. Job Done.
