for one plants also need oxygen to live, they use oxygen just like we do. they do release oxygen when they photosynthesize though.
secondly, space is huge, there would be no way for us to ever release enough plants into space to do any good whatsoever. maybe a planet. if we engineered some plant to grow on mars, or maybe even venus (one heck of a tough plant) then maybe we could make those worlds a bit more human friendly, but empty space, no way.
