The food on the Strip can get really pricey, so if you can, try to go off the Strip for dining, unless you and your date are 21 and can go to the dinner and show type-things; they can be reasonably priced as part of a package deal.
If you would like to get off the Strip, one place I loved eating when I lived in Vegas was an Italian restaurant called Carluccio's. It's not too terribly far from the Strip, I don't think. I've also heard that Bucca di Beppo is good, but I've never been there, so I can't vouch for it personally. There are also quite a few good restaurants in Chinatown, which is on Spring Mountain. There's a Japanese restaurant there called Shuseki (5115 W Spring Mountain Rd #117) that's pretty good as well.

always check out the strip. you just can't go wrong. I personally love the food at the new orleans buffet. They have this thing called all around the world and they have every type of food you can think of.
If you're into the rock scene..the house of blues is a great place to check and makes for a fun night. You could even eat at the mirage before hand to make it a *proper* date.
You could also check out mountasia. It has go carts, mini golf, pizza, and an arcade if you're more on the young side.
If you start wandering in las vegas, you never know what you'll find.

It depends on what you like to do.
Down to earth nature lovers or athletic: hike in Redrock, rent a boat or go fishing on Lake Mead, hike at Mt Charleston, take a picnic to Floyd Lamb State Park.
Art Lovers: do the buffet at The Paris and go to the art gallery at the Wynn.
Productions: Any Cirque de soleil show

Go check out Zowie Bowie on either Friday or Saturday nights at the Red Rock Casino ... they put on a great "hip hop" show (live band). It's fun and the spot is nice!
