I like the Paris myself (I'm 25 and just recently spent my birthday there). There's a fantastic resturant on the top of La Tour Eiffel that overlooks the strip and the dancing water gardens at the Bellagio. If you get a good room - you can see them all day. It's a beautiful hotel...
Caesars has it's benefits as well - it's got a world class mall (the Forum Shops) where you can buy anything your heart desires (even a Ferrari or Lambo) I'm quite partial to the Juicy Couture store... It's a little more expensive, but they are always updating it to keep it up to date. It's always been one of the better hotels on the strip.

no contest here stay in Caesars, class, elegance, history. Paris has none of these, nice on the outside with fountains etc, very bland on the inside, looks and feels like it was thrown up in a few hours. I don't like Paris LV at all inside.
If choosing Caesars stay in one of the two newer towers, the Augusta or the Palace. the older tower rooms are not as nice as those listed.
Other hotels near there I would recommend would be Mirage, Venetian, Wynn and Bellagio. Mandalay Bay is also beautiful but a bit far from the mid-strip location you desire.

Between those two, I vote for Caesar's. It may be older, but it's well-kept and very classy... the rooms are GREAT and Caesar's has a better pool area, more shopping and a bigger casino.
Of course, the benefit to Paris is that it can be substantially cheaper than Caesar's, depending on your travel dates. If cost is a big factor for you, I'm sure you'd be happy at Paris also. It's a very nice place. (I definately recommend the buffet at Paris. People rave about the all-you-can-eat crab legs... but I go straight for those yummy French desserts.)
For the best rates, get your room directly through the hotel. Here are the official hotel websites, in case you didn't already have them:
Caesars:

Paris:

(Yes, both properties are currently owned by Harrah's.)

Out of those selections..The Flamingo. large pool area, between the perfect in Vegas and actually suitable on the strip. Sahara and Stratosphere are in undesirable neighborhoods. The Excalibur is second decision purely because of region. in case you really opt for a deal stay at Hooter's on-line casino motel for $20 a nighttime weekdays or Sam's city on Boulder Hwy which grants a free luxurious go back and forth bus to the Strip and Freemont each hour from 8am to useless night. My decision could be Sam's city, which isn't on your record.

The Paris is heads and tails above Ceasars. They are in close proximity of each other (right across the street). But Ceasar's is much older and Paris has a lot of class. Have a great time!

My husband and I are in our 40's and we preferred Paris. It's beautiful and always clean. Very much worth what you pay.
