Well warriors do not have a good chance to dodge to start with so a knight elf might not be the best bet but it all comes down to what you want to do. While the warrior wont get much help from the 1% dodge they will with the stealth buff(in pvp)
The night elf rogue with get a better use out of the 1%dodge because they strive to dodge and parry.
And yes I believe they can duel weild...not sure though as I never had a warrior.

The Rogue Warrior Elf Cat Lizard Man Ball Room Dancer is the best character type.

As far as I know, yes, you can wield two one-handed swords.
And night elves are boring. Roll a dwarf. Or a gnome. Or a Draenei. Of your two choices, I'd probably go with the warrior, but I'd rather play a warlock or mage....
But at least you're playing the right faction...hehe.
