They are different breeds.
A brown cow is a Jersey. (smaller than a typical Holstein)
A black and white cow is a Holstein. (What people in US think of as a milking cow.)

Both can be used for beef production or for milking. The Holstein is (typically) bigger, thus giving bigger results (in milk production & beef) than the Jersey.

Different cows are generally better for either beef or milk, although they can be used for both. Most farmers only breed for one or the other on their farms.

The most common ones you see are Jersey (brown) and Holstein (black & white)

Black & white cows are holsteins-great for milk.
Brown crows are either gernseys or jerserys -good for milk too.
Those are the milk varities.
Beef cattle range from Black, white, Brick red &white, to Brick red. Those are the usual ones but there are other varities too.
