to study their anatomy, most likely in comparison to the human anatomy. also, to study their physiology (how it all works). mainly to get a well-rounded study of different organisms' anatomies. what makes them eat what they eat? what makes them walk the way they do? the list goes on. it's basically a way to just study something-it's what a good scientist would do (in the name of science).

Usefulness of animals dissection enable it as a use of animal models to identify genes and pathways associated with certain complex disease.
It would also allow understanding of the functions of certain organs, pathways etc.
Dissection on animals allow future surgeons to practice...
