Depends on what kind of day you want really! There is Cadbury World which is good fun, the sealife centre is good (but quite quick to go around!). The shopping is good at the bullring as well.
I went to the National Trust Back to Back housing the other day which is right in the centre - they give u a guided tour of 4 houses which go up form the 1820s to the 1970s. Very informative and took just over an hour and was a great bit of Birmingham history. (If you want to do this, you must ring up and book, the number is on the national trust website) If its been a nice day like today, you could go to the nature centre in Cannon Hill Park if thats something you would like to do - surprisingly pretty considering its so close to the centre of Birmingham! Hope you have a nice time!

Cadbury World, Big Art Gallery in the City Centre, Sealife Centre in Brindley Place, Millenium Place Interactive Museum. Many many great restaurants, pubs and clubs centred around Broad Street. Hundreds of shops, little art gallerys, museums etc

Pick up a bunch of leaflets from your hotel, there are literally hundreds of things to do, it depends on who you are and who's coming with you, kids, adults etc.
