You take fat (which is a triesters of glycerol and fatty acids) and hydrolyse it with KOH or NaOH. Alkaline is base (NaOH or KOH).

CH2O2CnH2n-1
CHO2Cn'H2n'-1
CH2O2Cn''H2n''-1 + 3KOH -->

CH2OH
CHOH
CH2OH

+ KOOCnH2n-1
+ KOOCn'H2n'-1
+ KOOCn''H2n''-1

The potassium salts are the salts of the fatty acids = soap, and the by product is gycerol.

Briefly, your question interests SOAPMAKING PROCESS.
The Chemical Reaction involved belongs to "Nucleophilic Acylic Substitution" where a NUCLEOPHILIC REACTANT (e.g. Alkalies) leads a Nucleophilic Attack against CARBOXYLIC DERIVATIVE (e.g. Esters).
AN ALKALINE AND WARM BATH SUBSTAIN THE REACTION's RATE : on the other ways, Neutral and/or Cold Conditions leads the reaction by means of VERY SLOW RATE.
WARNING!! BOILING LIQUID MAY SPRAY VERY CORROSIVE DROPS!!!

I suggested you yet that this reaction takes place between ESTERs as Tri-Acyl-Glycerols and ALKALies as Alkaline Metals Hydroxide.
Using Tri-Acyl-Glycerols of UNSATURATED FATTY ACIDs,
I retrieve for Oil's using against the suggested Alkaline Metals Hydroxide : OILs against SODIUM Hydroxide give HARD or SOLID SOAPs while POTASSIUM Hydroxide gives the SOFT Ones.

I hope this helps you.

Soap is made by boiling a triglyceride with lye or sodium hydroxide, NaOH. The Na+ attaches to the fatty acids and that is soap. The glycerine is a left over product.(Fats breakdown into fatty acids and glycerine) Detergents are made from NaOH and organic alcohols. KOH can be used for a softer soap.

I make soap at home....here is a website that explains it in terms that you can understand if you did not major in chemistry :) Currently the recipe I am using consists of olive oil, cocnut oil & palm oil mixed with water or milk & lye. There are tons of recipes on the site below.
