Because the important part of Piano is....Piano, and the important part of race car is not the race (that's an adjective here), but the CAR. (If it was a black piano, would you call him a blackist? no, still a pianist)

So to properly phrase your question, you should be asking why the race car driver isn't a carist.

as a counter question, then we can do away with sexist then, as that would define a different person with a different activity and throw away all those complaints.

What defines a race car? A car that is in a race? Many people race at a red light, are those cars "race cars"? Suppose its a good question, but alas, the world can't get too complicated.

Not all people who play the piano are truly pianists. And not all people who race cars are necessarily racists.

Simply because "race car" comprises of two words "race" and "car" whereas, "piano" is one word therefore "pianist". The word "race" (as in the human race) is one word therefore, "racism" but you can't say "race carism, or car racism" for a driver of a "race car".
