One snail died a couple of weeks ago. Now the other started laying eggs everywhere. Will they hatch if there is just one?

Yes the eggs will hatch even is there is no other snail in the tank.

Snails are hermaphrodites, and if one has been fertilized it can continue to lay eggs for several months.

The eggs need no supervision after they have been laid, and once they start to hatch you are going to have a problem because they can start to reproduce rather quickly.

Unless you want a billion snails I would suggest removing all the eggs you can see, even then you are still going to have a lot of extra snails in the tank.

Gold fish. and some Loaches will eat them while they are small so adding one of these fish might be a good idea.

If the clutches are the large pink kind - the female can keep laying these for up to 8 months after the last time she mated. If you don't want babies just slide a credit card under the clutch and pop it off for disposal. If you only want a few babies you can cut a portion of the clutch off for hatching.
