In The Shadow of the Collusus for the PS2, What is the point of the little lizards running around?

You can kill them and pick up there tail. WHY!!!?

White tailed lizards give you extra stamina should you eat those tails. (stamina being guaged by that pinkish circle) They are found near save points most of the time. Apples will increase your health bar as well.

I never played the game...though I want to. I have read that you can eat their tail I am not sure why you do..health?
