why is red coulor released when a beetroot is put in hot water?

when a bettrot is put in a hot temperature that causes the red pigment leakage out of the vacuole and phopholipid bilayer. I want to know exactly what happens and why? is it because of the enzymes changinf shape? please help!!!

hot water distrubts the phopholipid bilayer since the molecules gain more kinetic energy from the hot water -lipids become more fluid as temperatures increases, there is also proteins is the lipid bilayer which may denature hence change conformation and result in 'holes' in the membrane.as a result pigments will be released from the protoplasm.
