when a bettrot is put in a hot temperature that causes the red pigment leakage out of the vacuole and phopholipid bilayer. I want to know exactly what happens and why? is it because of the enzymes changinf shape? please help!!!

in beet root the pigment is dissolved in the cell sap( the liquid present in the vacuole) and when u boil it, the cell membrane gets dissolved all the membrane bound organelles gets dissolved thereby liberate the pigment into the surrounding layers..
and enzymes donot change their shape unless some degradation happens.........

red colour is released because the proteins of the cell membrane(integrat tunnel proteins and the peripheral proteins) gets denatured and therefore the plasma membrane becomes permeable in the sense that it disintegrates and therefore the red antocyannin pigment leakes out of the cell.
