Lower East Side will do delivery (prior to Shabbos obviously). Have you tried Noah's Ark? They do a triple wrap for warming in traif oven. Also some of the markets (the one near the Lower East side store) have some kosher items - you could order rolls/challah from Lower East side should you keep Pas Israel, and supplement with lunchmeat, dairy, etc.

Here's something about Publix:
Publix is a supermarket chain based in Florida, not a restaurant. The Publix in the Lake Buena Vista (i.e. Disney) area is at the NE corner of SR 535 and 192, in the shopping plaza. It's your average supermarket and they stock everything you expect to see in a supermarket, kosher and non-kosher, but not a large variety of kosher meats or specifically kosher products. For stores closer to the Universal area, search Google for Publix store locations. It is said that the Goodings in the Crossroads shopping plaza carries more kosher foods, but one could not find packaged Empire meats. The Crossroads is on SR 535 just north of I-4. (From the south, it's the second right after the highway.)

Gooding's prices are a bit higher because they're in the resort and hotel area, but they carry all the same foods as Publix. I believe Goodings is NOT part of a food chain, so their prices wouldn't be stabilized.

Also, for restocking other trip supplies, including foods, at decent prices, there are 2 Wal-Marts in Lake Buena Vista. One is on 192, east of SR 535, on the south side of the street. The other is on Osceola Parkway just east of the Turnpike. It's larger and newer than the first, but BEWARE! Osceola Parkway is a toll road.

Also, a word on Disney for anyone out there, each park has at all times Kosher food in at least ONE counter serve (ie. fast food) restaurant. In Magic Kingdom, it was at Cosmic Rays starlight cafe. In MGM it was at the ABC Commissary. The cost is roughly $8.99 for a 1/4 pound burger. The hechsher is glatt, circle K.
