I've got a work trial in 2 days doing cold prep in a restaurant and I have NO IDEA what I'm doing! I've done some small catering jobs but never worked in a big commercial kitchen... but I don't think the guy who's given me the trial knows that. Please help!

What are the things I absolutely must do to get the job? Be fast? Do exactly as I'm told? What else?

What are the worst mistakes I could make, and how do I avoid them?

What should I wear?

Any other tips at all??

I'm surprised you weren't told what the dress code is. By all means call them and ask. Some companies supply your uniform, some require non slip shoes these are things you need to know.
I have managed if food service for 20 years. The things I look for in an employee
Listen to the entire direction or statement.
Don't interrupt the speaker.
Do not make assumptions.
If you aren't sure ask someone.
Clean as you go.
Don't tell them about how someone else at another job does things. Each employer has their own standards.
Follow directions in the order they were given.
Be on time, clean and ready to work

relax first of all, most cooks in restaurants wear white pants, black shoes and white cook coat. Cold prep is easy, Chef will tell you what you have to make, maybe a lot of cutting to be done, making salads, getting ingredients ready for cooking, the worst mistake you can do is not ask if you dont know, they should have pictures posted of how the food is supposed look on plates also,

ALWAYS wash your hands!! Wear hairnets, dress casual or go into the restuarant and see what other employees are wearing. Ask your supervisor.
