Hi!I'm Italian...so i think i might be able to answer your question..or at least give you a hint ^_^....I'm sorry if I make mistakes..

Well,in the past there weren't many rich people in Italy, most part of the population was composed by farmers and peasants. So people based their lives on agriculture and breeding...grain and whaet became basic ingredients because they were easy to coltivate and they could be used to make lots of things (pasta, flour, bread, soups and so on).Besides, thanks to the mild klima Italians have been able to exploit the land and its "bounty".Italian cuisin is so based on "Earth Producst" which are cheap, easy to find and healthy.
Italian Eonomics was at the biginning basickly rural and agricultural.Despite the industrial revolution the traditions have been kept, and that's why we still eat past and pizza(but obviously not only that stereotypical food)

I hope you kinda got the idea...
