You have to prove conclusively what you were doing during the gaps. I've had similar grief trying to get a contract where a major bank is the client. They mainly want to make sure that you haven't been detained at Her Majesty's Pleasure. If you've nothing to hide, offer to have a Police Check done.

First, I am sure you have a very reasonable explaination about the 'gaps'.
Your history needs to contain as much information as possible as this will clear up any ambiguities. The other thing is that a criminal record/s will be looked down upon.
If you have gaps in your working history, these need to have reasonable cause with the time frame that you have indicated to your prespective employer.
Say you had 3 months somewhere maybe you went on a trip somewhere? (don't make anything up unless you know all the answers if they ask you questions about it)
A police check maybe involved if they are asking for 5 years working history.
I personally have never come across a request such as that or have requested it from any of my potential employees. 3 years is normally enough.
I would also think about the type of work your are applying for and whether your past work is consistant with this new one?
You will have a much better chance if it is.
Employers generally like people who haven't changed jobs too often and have kept in the same industry.

I think most employers will look for this. They want your work history and any periods of unemployment. If you have some periods of unemployment, think of something constructive you did during that period to show that you were being proactive. I recently had to provide this for an employer and had a six month period when I wasn't working. I explained that I used the time to re-decorate my house in preparation for selling it, and also used the time to do an evening class. They seemed happy with that.

You will have to state why there are gaps, it depends on the type of job you are going into, they may insist whole five years is accounted for

Its just a vetting process, just say gaps were travelling holidays etc. include the good refrences an skip the rest.
