Burning Sage is just that. You burn the spice sage. From what I understand it works as a cleanser for spells

It is a common mistake for people to confuse sage and sage-brush. It is the sage-brush, that is tied together as the basis of smudging sticks (this is a traditional magical usage utilised by the Plains Indians, for purification and exorcism). Burning sage-brush will also drive away malevolent forces, the smoke also has healing properties. Also you cane bathe with sagebrush to purify yourself of all past evils and negative deeds.

Other than that, sage (the kitchen variety) in magick is utilised to ensure a long life - sometimes believed to promote immortality. This is done by eating some of the herb every day, or at least in May.

Sage may also be carried to promote wisdom, and the leaves are used in countless healing and wealth spells. It was once used to guard against the evil eye, this was done by wearing a small horn stuffed with the leaves.

If you desire to make a wish come true, write it on a sage leaf and hide it underneath your pillow, for three nights sleep upon it. If once you dream of what you desire your wish will be materialised; if not bury the sage in the ground so that you do not come to harm.

Burning sage has nothing to do with spells.

Burning sage drives the evil and negative spirits away from an area.

In brief it is a method of doing an exorcism or house blessing.

Sage is both a type of plant, and a kitchen spice.
The other contributors have more than adequately covered the uses of sage, and I thank them.

Burning sage is a useful way of cleansing a space or person of dark energies. I never liked social gatherings where they did that when my main source of energy was dark... I was a neophyte at that time, so... times have changed. But it is a useful way of neutralizing free agents.

Sage is taken as a bundle and set to smolder, producing a thick smoke that the user waves around the house to dispel "evil energies." The practice originated with Native American tribes. It is also commonly called "smudging."
