I have software just for this its called spin doctor. I have used it on the Mac and its perfect for the task. I dont know of any PC softwares off hand but im sure there is.

There is also a new type of record player that uses a very small video camera and software which recreates the audio on your computer. It even fixes scratches and other problems that might be on the record. Im sure its very costly thou and i dont have a link or name off hand.

when i recorded my old Now LPs i used a cable which looks like a headphone socket on both ends. i just plugged one end into the line in on my soundcard and then plugged my stereo/record player/minidisk player into the other end using the headphone socket. i then used a programme which records noises from the soundcard (think it was called Free Recorder) and used this to record the songs i wanted.

then i used Cool Edit to tidy up the crackle and then saved it to mp3

TAAAAAAAADAAAAAAAAAAAAAAAA!

Its more of a software issue as you just have to use the Audio in on your sound card.
Also I use a USB turntable a bit like these
