I am trying to install a light where a 220 outlet above my stove once was. Since a 220 has two black and two white lead can you just cap off one of each and wire the other to the light? If not, how do you do it?

It sounds like someone made a 120v joint in your old hood fan it does Not sound like its 220v, Check it with a meter first! If it is a joint and you cap any wire off you will lose power somewhere in your home, check your voltage.

Something is not right here! If there are more than one set of wires then someone has wired in a second application, that's not a problem, only the way you have written the question is kind of confusing. My best advice would be to leave the wiring as it is, and just take a supply from the existing two wires originally supplying the old light. As for 240-110, you have the choice of using a transformer or perhaps two 110v bulbs in series, only like Christmas tree lights, when one fails, the other will go out too. But that's no big deal.

The best advice, is have someone qualified to look at it, though you knew that didn't you!

Use one black and white for 115v. Are you sure about 2 white wires? Usually it's 2 hot and 1 common(white). If there is in fact 2 white wires, use both of them. The second white might go to another appliance. A second common shoulden't be there. Someone made an improper connection before.
