Because Jesus liked eggs!
I kid. Really, because eggs, bunnies, and baby chickens all represent spring and fertility.
When early Christians were out trying to convert Pagans to thier way of believing, the Pagans (even the ones that were receptive to Christianity) didn't want to give up thier holidays and celebrations. So one way to convert them and still keep them happy was to keep a few of thier symbols and rituals and incorporate them into Christian celebrations.
So the fertility celebration was blended into Easter, and we put up a pine tree to celebrate the birth of Christ.
But then again, I do love shouting "Jesus is back! Hide the eggs!!!"
So that might be the real reason we do it. =)

Yes, egg represent new life. But you don't have to celebrate easter with giving easter eggs or chocolate crosses. Just be your self; be creative. Well a cross would bit a bit much, biting off a chocolate Jesus' head is bound to be different than biting the ears off your chocolate rabbit....but eggs are a old symbol of spring/rebirth. Just a combo of old symbols and new. And candy
