There is a book, by Henry Gray, which is about the anatomy of the human body. The character Meredith's last name is Grey. Since the show is a medical show, they call it Grey's Anatomy

Well, there was a book called Gray's Anatomy. They wanted to correspond to that. So they named the show after the main character and changed it up a little by changing the "a" to an "e". Grey's Anatomy! The show was originally going to be called "Complications" so I'm glad they picked Grey's Anatomy instead!

It was the title of a medical text book. Grey is Meredith's last name. Anatomy because they're doctors.
