They mist up due to the humidity in the air and it will condense on the windshield. Cars with AC will use the AC in the defrost position to heat the air and then to cool it a little to remove the humidity so it helps dry out the moisture and removes it from the windshield.

Because of the humidity in the air.Like when you set a cold glass of water on the table on a hot day.

You won't have this problem if your car has airconditioning. If it has, use it.
