The word "Cajun" is actually derived from the word "Acadian". The French that ended up in New Orleans first stopped in Canada. Their cooking is a terrific blend of classic French tradition and technique adopted for the ingredients found in the bijous and farms of Louisianna. Not to be confused with Creole, the African inspired cuisine of the same area. The combination of Cajun and Creole, however, give New Orleans a justly deserved reputation as one of the world's great food cities!
