ok i have a 2001 cadillac deville..first of all..sometimes when i turn it on it turns right off..or i can be driving and it will turn off by itself ..its weird..sometimes i can put it in park and the RPM's shoot up from like 700 to 1300 or so on..up to the most i seen was 1500 RPM's...it can sit there a go up and down really when i put in reverse..i dont know what to do.. i have been told to check fuel filter..i dont want to have a wreck on the highway or anything..also i have been taking it to the shop and they cannot find anything..please i need help..any suggestions?

If the shop you take it to can't address this failure, at least retrieve trouble codes, find another shop. This guy may be very reasonable, but if he can't repair your car, why go back to him?

Sounds like a vaccum leak. Check all of your vaccum lines for dry rot and cracks. If not that it might be a bad intake manifold gasket.
