I added an extra one "Nationality", so the difference between Race, Ethinicity and Nationality.

Race- the color of ones skin, your appearance.

Ethnicity, or ethnic identity, refers to membership in a particular cultural group. It is defined by shared cultural practises, including but not limited to holidays, food, language, and customs.

Nationality refers to our citizenship -- in other words, the nation we are a member of.

So lets say for an example that I'm white, and my parents moved to Mexico and thats where I was born and raised, but I moved to the USA in my 40's and became a citizen. My race would be white, my ethnicity would be spanish/mexican, and my nationality would be American.

I think that ethnicity is the whole picture of the person. Including culture, race, history, foods, holidays and stuff. Race I think is just the person's place of decent along with skin color and those the only thing considered.
