Would simple hook and eye clasps ( the small metal ones) work well for a long light weight jacket, or would they come undone easily all the time?

I think it would depend on the quality of the hooks. I've had some that would hold through just about anything and some that came loose all the time. Both from the same manufacturer. The major problem I'd see with trying it, though, is that it would be a pain to do them up if you're closing the entire length of a long jacket.

You might want to try a frog (yes, that's what it's really called) closure.
