Flat cells are mostly found in tissues that cover body surfaces or line body cavities. These tissues are called epithelial tissues. In the case of cheek cells, these function to cover and protect the inner lining of your cheeks. The cells' flatness allows many layers of these cells to constitute the inner cheek lining. The outermost layers are constantly worn off by the action of the mouth's chewing action and the passage of food. The lower layers that are left behind are pushed up to the surface by even lower layers that multiply via mitosis, or cell division. The flatness of the cells allow to multiple layers of cells that protect the deeper layers where blood vessels and nerves are located.

Cheek cells cover the inside of the cheek. Their flat shape makes a good lining or cover. Think of the shape of roofing shingles or siding on a house. Flat makes a good cover.
