Hungarian goulash. It's easy and tasty.
Paprika provides a lot of the flavoring for this dish. It isn't just for just sprinkling on deviled eggs for a little color.
2 1/2 pounds stewing beef. (I often cut up a small chuck roast into smallish chunks the size of the your finger up to your first knuckle.)
3 or 4 medium large sized onions, coarsely chopped
1 can chicken broth, 12 - 16 oz.
Hungarian paprika to taste, I use about four HEAPing tablespoons to get started. It comes in two varieties, sweet and hot. Sometimes the sweet is pretty hot, and sometimes the hot isn't very hot. Experiment and season to your taste.
1 small can (8 oz) tomato sauce
Salt to taste.
A teaspoon or so of caraway seeds. (Optional)
Brown the meat in a little oil in a large heavy pot. Add the chopped onions, and continue cooking until they are transparent. Add the remaining ingredients, and enough water to just cover the meat and onions. Cook over a medium low heat until the meat is tender and the onions have cooked up to almost nothing. Add water if necessary. The onions provide the thickening for the broth. It usually takes about two and half to three hours.
Serve over boiled noodles. It reheats well, and is a great bachelor type dish.
I spent about four months in Vienna in the early 1970's and EVERY restaurant seemed to serve goulash - it was the Austro-Hungarian Empire connection.

Artichoke spinach dip...I'm just as good and better than many restaurants. Every special occasion, I'm asked to bring it. I was told by a friend that if I didn't bring my artichoke spinach dip that I would not ba allowed to enter the party. Unfortunately, it's the only thing that I can cook!
