Generally "waxing" of the teats and very loose muscles in the rump are a good indicator.
to be even more sure they have testing strips that will tell you within 24 hours of foaling.
You can use pool test strips too...reduced ph levels indicate within 24 hours..(I know it sounds wierd, but it works.) (ph level of the milk drops just before foaling)

They usually give birth at night or in the early morning hours. You need to have a vet check her and tell you if it is getting close. My sister actually sleeps outside or in her trailer when the time approaches so she doesn't miss the birth when her horses are due. You may need to be there to assist the horse if there are any problems.

Check her udder every day. It will enlarge. The day before she gives birth there may be some milk leaking. Every mare I have checked seemed to follow this pattern. When she delivers it is a good thing not to let other horses in her pen, especially the stallion.
