Hi, I make my Thai Green Curry with eggplants. The best eggplants for this are the Thai small round eggplants, the kind that are light green with white strips. But if I can't find these, I go for the long purple Chinese eggplants, or even regular old purple American eggplants. If you plan to make green curry, you'll need coconut milk, sweet basils and fresh serrano peppers (or jalapeno), too, and of course, whatever meat you like.

I like the Italian and Pilipino ways to cook eggplants. I plant eggplants in my back during summer,and it is fun when it is ready to harvest.

in musaka
in papoutsakia (i.e shoes lol) - filled eggplants with minced meat and bechamel
sliced thin,dipped in flour and deep fried
in the casserole with potatoes and tomato
salad made in the blender which is cool and great for the summer
in pasta sauce with garlic and tomato and green peppers
i am Greek so i love Greek cuisine and Greek cuisine loves eggplants!

I love eggplant as well, my Italian husband really got me to absolutely love it. We have it in stir fries, I love it in Chinese and Thai foods, and baked as well. (Eggplant Parmigiana)

my favorite growing my own vegetables zucinni and tomatoes potatoes string beans all kinds of peppers
leaks scallions and herbs,,,, i love to mix these vegetables in a pot and steam them ...i can eat for months
no meat stuffed tom .pep.egg plan. zucc using the
insides and some rice as the stuffing a little herbs and spice,,, and bake it in the oven...don't forget some potatoes
garnish them with olive oil and oregano bake them with your
stuff vegetables....there is Gk. moussaka...egg plant and
a stewed chopped meat in a cream sauce check out its receipt....i can go on..i love egg plant in fact i live on
vegetables shell and fish and poultry

I Love to roll it in Flour, salt and pepper and Fry in Grease until its Crispy like I do fried Squash.
