There are lots of cells making up the human eye and it is rather complex.

Have a look at the wiki page and look at the labelled diagram of the eye.

From the front to the back:

o Cornea - this is a curved lens that acts as a "windshield" for the eye, made up of tough transparent cells that let light through. They reproduce quickly and have many layers to prevent grit and anything else from entering the eye.

o Iris - this is a sphincter arrangement with muscle cells that dilate and constrict the pupil

o Lens - this is a flexible transparent structure behind the pupil that can further focus light entering the eye. I don't know much about the cells of the lens, I'm sorry.
o Ciliary muscles - more muscles cells which can change the shape of the lens

o Retina - here's where the action is at. Specialized cells for light perception - rods and cones - converting light into nervous impulses to be carried back to the brain by the optic nerve

o Optic nerve - axons of nerve cells attached to the retina

The eye is a very complex organ. Most of it is devoted to sight, but since it is a bodily orifice, it also plays an important part in the immune system. Eyelids, lashes and tears are all immune protectants. The rest of the eye is nearly ignored by the immune system. The eye is directly connected to, and depending on who you ask, actually part of, the nervous system. It is capable of causing reflex reactions in the body, which is why the cops can use a flash grenade to stun you before they raid your house. The reflex activated by the eye is uncontrollable.
