it stands for Extended Play. an EP is usually a smaller album (4-7 songs or ~15-30 minutes) released by bands who are between releases, to build up hype for their next LP, or Long Play (a full album) ...
All of this terminology hails from the days of vinyl, when the records were actually different sizes: a single would be the smallest, EPs landed somewhere in the middle and LPs were those big 12 inchers. the term "B-side" is also a holdover from vinyl, when the B-sides *were* on the other side of the record.

"Extended Play"
They have very few songs , most of which are just extras like demos or unreleased songs.
Usually, you'd buy one after getting the full album, and since you'd want to hear more of that kind of stuff, it'd be considered "extended".
They are not limited to vinyl, as any CD about 2 to 5 songs long is usually considered one.
