The Animals version was based on Dave Van Ronk's version; Bob Dylan also performed it, but I don't think any of them actually wrote it. The Animals version is certainly the most popular.
According to wikipedia, the origins of the song is unclear. Alan Lomax credits the lyrics to Georgia Turner and Bert Martin. The oldest known recording is by Clarence Ashley and Gwen Foster.
