Cattle stand up with their front legs first because their hind legs are much stronger. When a cow, for example, straightens their front legs first, their slanted position shifts their weight to the hips and rump area. The legs, being more muscular, are able to withstand lifting that type of weight easily. Also, when they are about to stand on their hind legs, they shift their weight slightly forward to the shoulders to help them move the back legs easier. If they were to shift their weight a little too much to the front, it would be easier for them to 'catch' their balance in the front than if the same scenario were to happen in the back. basically, they'd fall over backwards. heh, a rather humorous thought.

as for sheep, the same logic applies. they are light enough that they can get up back-end first if they wish. and I HAVE seen sheep get up with their front legs first! :)
