Are you sure you want to go to the parks with that amount of time, you really won't have much time. I'm assuming you will be coming from Port Canaveral, which is about a 90 to 120 minute drive. Let's say you get off the ship around 8 or 9 you are looking at 10 or 11 until you get to the parks. Then you would have to get into the parks and to the rides. You also have to get to the airport which is about a 30 minute drive, and you should get to the airport at least 2 hours ahead of time, so that means you should leave around 4:30 or so. That would only give you about 5 or 6 hours in the park. Considering it is around $70 per person to go to the park, it can be a little expensive, not sure if you are on a budget or not.
Anyhow, as far as which park, it would depend a little on the ages and what you like as far as rides. Universal and Animal Kingdom are all smaller parks, so it doesn't take as much time to see most of the things. EPCOT on the other hand is pretty big and can take a good 2 days to see everything, but it does have some of the best rides in Disney. Universal is going to offer more thrill rides, while Disney's rides are a little more easy going, but they do have a few rides that are a little on the thrilling side, like Expedition Everest. All of them are good choices, I think the best way to decide is to look at the parks and what rides they have and see which park has the most rides you really want to try.
All the parks are great, but with limited time, I think I would go with Animal Kingdom or Universal, but I think you could have a good time at any of the parks.
Have a great time on your cruise and have a great time at the parks!

I would deffinetly choose a Disney Park for your family. It deffinetly has a different "feel" than Universal. Plus, it is the year of a million dreams a you may win a free prize you never know! I would pick Epcot. It would have attractions for everyone nomatter what the age of the people in your group! Plus there is amazing food. Epcot also has a new ride called Mission Space that is very fun! Hope this helps!

I agree with an above answer. With the drive on the expressway from the Cape to Orlando, you might not have as much time as you would like, especially with how much the tickets to the parks cost now-a-days. It is hard to do Disney (the Magic Kingdom) in one day anymore.

Depends what you like. I like Universal over them all. It just is more interactive and you get to see how movies are made and props and rides from movie themes.
Disney is more for kids..the characters and the rides. They have a couple of decent roller coasters though.
Animal kingdom is nice if u like safari rides and looking at animals.
Never been to Epcot

prob. depends on the ages and if they have been to any of them before. I like for the older ones Universal, MGM, even Animal Kingdom ( the bugs life show located in the large tree ) so cool!
